Who doesn’t like pancakes? It’s the ultimate breakfast comfort food, plus there are so many options when it comes to making them. You can go the old fashioned way with white flour, eggs and milk… or get a little more creative and put a healthy twist on the ole flapjack. One great way to do that is to incorporate turmeric powder into the recipe.

Turmeric root has been getting a lot of recognition lately as a sort of superfood, and for good reason. It has a great natural taste that incorporates well into many recipes, and it’s a powerful antioxidant that can have a dramatic effect on your health. It’s a natural anti-inflammatory which is great for anyone suffering from arthritis or sports injuries, and, studies show turmeric is beneficial for brain development and may help lower your risk of brain related illnesses such as Alzheimer’s and dementia.

Seriously, if you’re just using store bought syrup, you’re really missing out (not to mention consuming a lot of sugar). Golden Pancakes Recipe

Dry Ingredients

  • 1 cup almond flour
  • 1 tablespoon Golden Milk
  • ¼ teaspoon baking soda
  • Pinch of salt

Wet Ingredients

  • 2 large eggs
  • ½ cup light coconut milk
  • 1 teaspoon vanilla extract

Instructions

In a large bowl mix together the Golden Milk and coconut milk until well blended. Add the eggs and vanilla extract. Slowly add the almond flour, baking soda and salt until well combined. Set aside.

Spray a large griddle, preheated on low, with cooking spray (or  your can rub it down with butter or coconut oil). Slowly pour about ¼ cup of pancake batter onto the griddle so that it forms a nice circle. Watch for the edges to bubble and turn golden brown before flipping with a silicone spatula. Cook for another two minutes on the other side or until golden brown. Serve hot with your favorite toppings!
