January is Thyroid Awareness Month, so we’re sharing some great sushi recipes that are ideal for thyroid support. Sushi makes such a great ally for your thyroid, because seaweed and seafood are both packed with magnesium and iodine, two nutrients that are crucial for the proper function of the thyroid.

Nutrients Your Thyroid Needs:

  • Magnesium – Kelp, avocado, kefir, green leafy vegetables and nuts.
  • Iron – Seafood, organ meats, beans, lentils, spinach and nuts.
  • Iodine – Found in seaweed, iodized salt, tuna, green peas and bananas.
  • Vitamin D – Found in fatty fish such as salmon, tuna and mackerel.
  • Selenium – Found in meat, eggs, poultry and dairy.
  • Zinc – Found in red meat, poultry and shellfish.
  • Vitamin A – Found in fish, poultry, red meat, dairy and fruit.

Sushi rolls are such a great option for thyroid health, because you can constantly change up your options and never get bored. Brown sushi rice is a smart choice for thyroid health, so go ahead and roll up some good stuff. Here are some of our favorite recipes to help you get started.

Avocado Tuna Roll Recipe

Ingredients:

  • 2 Cups Cooked Brown Sushi Rice
  • 5 Sheets Nori
  • 1 Avocado
  • 4 Oz Tuna
  • 1 Medium Carrot, Julienne Cut
  • 1 Medium Cucumber, Julienne Cut

Directions:

  • Cook the sushi rice according the package instructions.
  • Take one sheet of nori and place it shiny side down on a bamboo rolling mat.
  • With wet hands, take a scoop of rice and spread it over the nori, starting in the center. Make sure to leave ¾ of an inch of nori blank. Lay tuna strips, vegetables and a two slices of avocado in the center of the rice.
  • Holding the roll in place with your fingers, lift one side of the bamboo mat and roll it until both sides of the nori and rice meet and stick together. Pat firmly with your fingers and remove the mat.
  • Cut the roll into six pieces
  • Repeat process for each sheet of nori.

Serve with pickled ginger, wasabi and soy sauce.

Salmon and Crab Roll Recipe

Ingredients:

  • 2 Cups Cooked Brown Sushi Rice
  • 5 Sheets Nori
  • 3 Oz Smoked Salmon
  • 3 Oz Fresh Crab Meat
  • 1 Cucumber, Julienne Cut
  • 2 Tbsp Rice Vinegar

Directions:

  • Cook the sushi rice according the package instructions.
  • Take one sheet of nori and place it shiny side down on a bamboo rolling mat.
  • With wet hands, take a scoop of rice and spread it over the nori, starting in the center. Make sure to leave ¾ of an inch of nori blank. Lay 1 salmon strip, vegetables and 1 tablespoon of crab meat in the center of the rice.
  • Holding the roll in place with your fingers, lift one side of the bamboo mat and roll it until both sides of the nori and rice meet and stick together. Pat firmly with your fingers and remove the mat.
  • Cut the roll into six pieces
  • Repeat process for each sheet of nori.

Serve with pickled ginger, wasabi, and soy sauce.
